RZODKIEWKI W MAŚLANEJ POLEWIE - RADISHES IN BUTTER GLAZE

 


Czekałam na tę książkę od kiedy zobaczyłam ją w zapowiedziach. The NoMad Cookbook Daniela Humm i Willa Guidara  spełniła oczekiwania jakie w niej pokładałam.

A jak zobaczyłam te rzodkiewki, to już byłam zupełnie szczęśliwa.

Wyglądają jakby były zanurzone w białej czekoladzie, a tu niespodzianka, rzodkiewki pokryte zostały masłem. Francuska tradycyjna przystawka w zupełnie nowej odsłonie.

I've been waiting for this book ever since I saw it in the previews. The Nomad Cookbook  by Daniel Humm and Will Guidara has met my expectations.

Only when I saw these radishes, I was sure it was worth waiting for.

They look as if they were dipped in white chocolate, however what comes as a surprise the radishes are covered in butter. French traditional appetizer in a completely new interpretation.

Składniki:

5-6 rzodkiewek
1 łyżka masła najlepszej jakości
szczypta soli morskiej

szczypta soli morskiej do podania

Rzodkiewki myjemy i usuwamy zewnętrzne liście. Zostawiamy delikatne małe listki. Osuszamy i odkładamy rzodkiewki na bok.

W misce postawionej nad garnkiem z gotującą się wodą podgrzewamy masło. Solimy masło i podgrzewamy mieszając aż masło będzie przypominać roztopioną białą czekoladę.

Zamaczamy rzodkiewki w maśle do połowy. Odkładamy na zimny talerz i wstawiamy do lodówki aby masło stwardniało.

Podajemy ze szczyptą soli.

For 1 person

Ingredients:

5-6 radishes
1 tablespoon best quality butter
pinch of sea salt

a pinch of sea salt to serve

Wash the radishes and remove outer leaves. Leave the delicate inner leaves. Dry the  radishes and put them aside.

In a bowl put over a pan of simmering water, heat the butter. Add salt and heat the butter stirring until butter is softened and resembles white chocolate.

Dip the radishes halfway into the softened butter. Put the radishes on a cold plate and put in the fridge until the  butter hardens

Serve with a pinch of salt.



MAKARON GARGANELLI Z PIECZONYM MIĘSEM, SZPINAKIEM I RUKOLĄ - GARGANELLI PASTA WITH ROASTED MEAT, SPINACH AND ARUGULA



Dzisiaj prosty makaron na wykorzystanie resztek z obiadu. Jeżeli został kawałek mięsa z powoli pieczonej łopatki, kurczaka czy indyka.

Proszę bardzo, oto pyszny sos do makaronu. Wyraziste smaki mięsa, suszonych w słońcu pomidorów połączone ze świeżością rukoli i młodego szpinaku.

Danie niezobowiązujące, w sam raz na prosty obiad.

Today, a simple pasta to use leftovers from dinner. If you have a piece of meat from slow roasted  pork shoulder, chicken or turkey.

Then here is delicious pasta sauce. Robust flavors of meat and sun-dried tomatoes, combined with fresh arugula and baby spinach.

Easy dish, just in time for a simple lunch.

Składniki:

2 szklanki makaronu garganelli

oliwa
2 ząbki  czosnku
garść pomidorów suszonych
sól morska i świeżo mielony pieprz
kawałek pieczonego indyka, kurczaka lub łopatki wieprzowej długo gotowanej
½ szklanki cydru
1 szklanka młodego szpinaku
1 szklanka rukoli
1 łyżka posiekanej zielonej pietruszki
1 łyżka posiekanego szczypiorku
parmezan


Na patelni rozgrzewamy oliwę, dodajemy do niej rozgniecione ząbki czosnku i suszone pomidory pokrojone w paseczki, doprawiamy solą i pieprzem, podsmażamy.

Następnie do patelni dodajemy mięso posiekane w długie wiórki, zalewamy wszystko cydrem i gotujemy, aż cydr wyparuje.

Zdejmujemy rondel z ognia i dodajemy szpinak, rukolę, pietruszkę oraz szczypiorek

W międzyczasie w dużym garnku zagotowujemy wodę. Solimy ją, zgodnie z włoską tradycją woda powinna być słona jak morze. Wrzucamy makaron, zagotowujemy i gotujemy na małym ogniu aż makaron będzie al dente ok. 7-8 minut.

Makaron odcedzamy (zachowujemy trochę wody z gotowania) i przekładamy do rondla z sosem. Podgrzewamy całość i przekładamy na talerze.

Podajemy ze struganym parmezanem.

For 4 servings

Ingredients:

2 cups garganelli pasta

oil
2 cloves garlic
a handful of dried tomatoes
sea ​​salt and freshly ground pepper
a piece of roast turkey, chicken or pork shoulder
½ cup cider
1 cup baby spinach
1 cup arugula
1 tablespoon chopped parsley
1 tablespoon chopped chives
parmigiano


Heat up the olive oil in a pan, add crushed cloves of garlic and sun-dried tomatoes cut into strips, season with salt and pepper and fry.

Next add the meat shredded into long strips, pour over the cider and cook until the cider has evaporated.

Remove the pan from the heat and add the spinach, arugula, parsley and chives. Cover and

DŻEM Z ŻURAWINY Z GRUSZKĄ - CRANBERRY AND PEAR RELISH



To może być najlepszy smak sosu z żurawiny. Jak naprawdę.

Połączyłam żurawinę z gruszką i rozmarynem oraz syropem z młodych pędów sosny.

Leśny smak. Wyszło to tak naturalnie.

Skojarzenie polegało na kupionej na lokalnym rynku farmerskim żurawinie. Jak wzmocnić jej leśny smak? Najlepszy będzie rozmaryn. A na półce, w kuchennej szafce, stał sobie słoiczek syropu z młodych pędów sosny.

Do tego gruszki – bo najlepiej smakują z rozmarynem.

Zaostrzamy wszystko papryką Pul Biber (inaczej Aleppo), ostatnio moja ulubiona! Kilka razy obrócimy młynkiem do pieprzu.

Rezultat – pycha! Sos pełen cierpko-słodkich, leśnych smaków.

Sprawdzi się jako dodatek do indyka, gęsi czy innego mięsa. Ale też doskonałe do serów, a nawet w deserach.

This may be the best cranberry relish combination. Ever!

I combined the cranberries with pear and rosemary and young pine shoots syrup.

Woodsy flavors. It came out just like that, naturally.

When I bought on the local market some cranberries, I started thinking: How do I enhance its woodsy flavor?

Ok, I will use the rosemary. What more, on the kitchen shelf there stood a jar of young of pine shoots syrup.

To all that I will add pears - because they taste best with rosemary.

The taste will be enhanced with some Pul Biber pepper (Aleppo is other name), recently my favorite! Several turns of black pepper and voila!

Result - yummy! The relish is full of sweet and sour, woodsy flavors.

Will be perfect added to turkey, goose or other meat. But also delicious with cheeses, or incorporated in a dessert.

1,5 szklanki dżemu

Składniki:

2 szklanki żurawiny
4 gruszki Bartlett lub Konferencja
½ szklanki syropu z młodych pędów sosny
2 gałązki rozmarynu
1/8 łyżeczki papryki Pul Biber lub pieprzu kajeńskiego
1/8 łyżeczki świeżo zmielonego czarnego pieprzu

Żurawinę myjemy pod bieżącą wodą, przekładamy do rondla.

Gruszki obieramy,  przekrajamy je na pół i usuwamy gniazda nasienne. Kroimy gruszki w grubą kostkę o wielkości 1,5 cm, skrapiamy sokiem z cytryny.

Dodajemy gruszki do żurawiny razem z gałązkami rozmarynu, syropem z pędów sosny oraz papryki i pieprzu.

Gotujemy owoce na małym ogniu aż żurawina i gruszki się rozpadną. Przekładamy do słoików.

yield: 1,5 cups relish

Ingredients:

2 cups cranberries
4 Bartlett or Conference pears
½ cup syrup from young shoots of pine
2 sprigs rosemary
1/8 teaspoon Pul Biber or cayenne pepper
1/8 teaspoon freshly ground black pepper

Wash the cranberries wash under running water, then transfer then  into a saucepan.

Peel the pears, cut them in half and remove the cores. Cut the pears into thick cubes of ¾ inch, sprinkle with lemon juice.

Add the pears to cranberries with together with the sprigs of rosemary  pine shoot syrup with pine shoots and pepper.

Cook the fruit  over low heat until cranberries and pears start to fall apart.  Transfer the relish into the jars.



OCET JEŻYNOWY DOMOWEJ ROBOTY - HOME MADE BLACKBERRY VINEGAR



Dawno temu, w pięknym średniowiecznym mieście Carcassone, w południowo-zachodniej Francji, znalazłam mały sklepik sprzedający ocet i oliwę. 


W tym sklepie, na półce stały octy owocowe, o przeróżnych smakach i kolorach. Zachwyciły mnie szczególnie smaki i kolory octów.


Kupiłam jeden - brzoskwiniowy. Wykorzystałam go szybko i miałam w planach odtworzyć te octy w domu. Ale trochę czasu mi zeszło. 


Long time ago, in a beautiful medieval town on Carcassone in south west France I came across this beautiful timy shop selling oils and vinegars. 


There was an array of vinegars in many tastes and colors. It was especially vinegars in their jewel like colors that enchanted me.


I bought myself peach vinegar, that I used quite quickly. I was planning to recreate the vinegars at home, but it took some time before I did so.

1,5 szklanki octu


Składniki:

1 szklanka jeżyn
1 szklanka octu jabłkowego

Jeżyny myjemy, przekładamy do rondelka i gotujemy aż puszczą sok, około 10 minut po zagotowaniu. 

Studzimy jeżyny, przekładamy do słoika i zalewamy octem jabłkowym. Zakręcamy słoik i odstawiamy na 2 tygodnie aby się macerował.

Po dwóch tygodniach przecedzamy ocet, owoce przecieramy przez gęste sito. Przelewamy do butelki i używamy.

1,5 cup vinegar

Ingredients:

1 cup blackberries
1 cup apple cider vinegar

Rinse the blacberries under running water, put tchem in the saucepan and cook until the fruit render juice, about 10 minutes.

Put the fruit pulp in the jar, pour the vinegar over the fruit, twist the top and shake well. Put in the shady cool place for two weeks to macerate.

After two weeks time strain the vinegar, pass the pulp thru the sieve. Pour into a bottle, cover and enjoy.




TARTA JABŁKOWA BEZ CUKRU - SUGAR FREE APPLE TART



Ta tarta pochodzi od Susan Spungen – bardzo spodobało mi się zdjęcie na Instagramie. Ostatnio dużo eksperymentuję z jabłkami bez cukru.

Przygotowanie masła z jabłek, zupełnie bez cukru, tak  czy inaczej daje nam dżem, który możemy wykorzystać na rożne sposoby.

Powstała kolejna, maślana i słodko-kwaśna, cynamonowa tarta jabłkowa.

Idea for this tart comes from Susan Spungen – I loved the picture of this tart on the Instagram.

I am experimenting a lot with cooking the aples sans sugar.

The apple butter, cooked without sugar, but with the cinnamon only, results in the healthy jam, we can use in many ways.

 And so this way we have yet another delicious, buttery, sweet-sour, cinnamony apple tart.

jedna prostokątna tarta

Składniki:

gotowe ciasto francuskie na bazie masła

masło jabłkowe
8 jabłek słodko-winnych ( ja użyłam jabłka Rubin)
2 laski cynamonu
1 łyżeczka cynamonu

3-4 jabłka
cynamon

Obieramy jabłka, przekrawamy je na pół i usuwamy gniazda nasienne. Kroimy jabłka w grubą kostkę o wielkości 2-2,5 cm, skrapiamy sokiem z cytryny.

Wkładamy jabłka do płaskiego rondla lub dużej patelni, dodajemy laski cynamonu i posypujemy cynamonem, smażymy na małym ogniu aż jabłka się rozpadną i zbrązowieją.

Przekładamy jabłka do miksera (wyjmujemy laski cynamonu) i miksujemy do uzyskania gładkiej masy.

Jabłka wkładamy z powrotem do rondla z wcześniej wyjętymi laskami cynamonu i gotujemy na małym ogniu aż mus będzie gęsty. To jest właśnie masło jabłkowe. Odstawiamy masło na bok.
  
Ciasto wyjmujemy z lodówki. Rozwałkowujemy ciasto do ok. 5 mm grubości i wykładamy je na blachę.

Wzdłuż krawędzi  robimy lekkie nacięcia, aby utworzył się brzeg. Całość spodu nakłuwamy widelcem. Wstawiamy z powrotem do lodówki lub zamrażarki aby się schłodziło.

Jabłka obieramy ze skórki, wycinamy z nich gniazda nasienne, i kroimy je na szatkownicyw poprzek na cienkie plasterki.

Wyjmujemy ciasto z lodówki, smarujemy je z wierzchu grubo masłem jabłkowym, na wierzchu rozkładamy plasterki jabłek. Oprószamy jabłka cynamonem.

Wstawiamy tartę do piekarnika i pieczemy przez 35-40 minut, aż ciasto z wierzchu będzie mocno złote.


one rectangular tart

Ingredients:

ready-made butter based puff pastry 

apple butter
8 sweet apples (I've used Rubin apples)
2 cinnamon sticks
1 teaspoon cinnamon

3-4 apples
cinnamon

Peel the apples, cut  them in half and remove the cores. Cut the apples into thick cubes about one inch size, sprinkle with lemon juice.

Put the apples into a flat large saucepan, add the cinnamon sticks and sprinkle with cinnamon and cook over low heat until the apples fall apart and are lightly browned.

Put the soft apples in a blender (remove the cinnamon sticks) and blend to a smooth paste.

Put the apples back into the saucepan with the previously removed cinnamon sticks and cook over low heat until it gets very thick. This is the apple butter. Put the butter aside.

Remove the dough from the refrigerator. Roll the dough to approx. 1/5 inch thick and put it on the baking tray.

Cut the dough along the edges, for the incisions to form the rant. Prick the bottom with a fork. Put the dough back in the fridge or freezer to cool.

Peel the remaining apples, cut the core out and cut them crosswise on a mandoline into thin slices.

Remove the dough from the refrigerator, smear the top with the apple butter  and cover with the apple slices. Sprinkle the apples with cinnamon.

Put the tart in the oven and bake for 35-40 minutes, until the dough and the apples are evenly golden brown.


PIEROGI Z DYNI PIŻMOWEJ - BUTTERNUT SQUASH RAVIOLI



Kto nie lubi potraw z dyni? Ta królowa jesiennych zbiorów znajduje wszechstronne zastosowanie w kuchni.

Zupy o wielu smakach – uwielbiam. Tarta dyniowa? Dawno nie robiłam. Mufinki dyniowe – pycha. Nowa wersja w przygotowaniu.

Ale moje ulubione to pierogi z dynią. Po prostu kocham, to połączenie dyni z masłem i szałwią. Tudzież połączenie dyni i amaretti. Kto by się nie skusił.

Co by tu wymyślić, jak zrobić ravioli bez ciasta? Mam na to sposób, wszystkie smaki pierogów dyniowych bez ciasta makaronowego. Jedynie dynia piżmowa pozwala uzyskać krążki odpowiednio duże do przygotowania tych ravioli.

Who does not like pumpkin? This queen of the autumn harvest is the most versatile vegetable.

Soups of many flavors – my love. Pumpkin tart? I have not doneit for quite a while. Pumpkin muffins - delicious. The new version is under preparation. 

But my favorite of all are the pumpkin revioli. I just love them, the combination of pumpkin with butter and sage is intoxicating. Or the combination of pumpkin and amaretti. Who would not be tempted.

But... what could I do to  to make ravioli without the pasta? Well, there is the way, all the flavors of pumpkin ravioli without the pasta.

Only butternut squash allows for the rings big enough to prepare those ravioli.

na 4 osoby – po 5 ravioli

Składniki:

jedna duża dynia piżmowa

1/2 szklanki startego parmezanu
1 szklanka ricotty
sól i pieprz
skórka i sok z 1 cytryny
żółtko
1 białko jajka, lekko roztrzepane do sklejenia pierogów

4  łyżki masła
20 listków szałwii

Kroimy dynię piżmową na dwie części. Wykorzystujemy grubą część, tę gdzie nie ma nasion. Obieramy ją ze skóry i kroimy na szatkownicy na cienkie plastry. Na cztery osoby powinniśmy mieć około 40 plastrów.

W misce mieszamy ricottę, parmezan, żółtko jaja oraz skórkę i sok z cytryny. Doprawiamy pieprzem i solą.

Na desce kładziemy 1 plaster dyni, na środku układamy jedną łyżeczkę nadzienia. Smarujemy dynię dookoła białkiem i przykrywamy z wierzchu drugim plastrem. Sklejamy dokładnie. Odkładamy na bok. 

Powtarzamy czynność z pozostałymi pierożkami.

W dwóch patelniach mogących pomieścić połowę ravioli topimy masło i podsmażamy aż lekko się zazłoci i zacznie pachnieć karmelem. Dodajemy ravioli i liście szałwii i smażymy obracając ravioli do czasu gdy masło będzie ciemno złote a szałwia chrupiąca.

Układamy po pięć ravioli na talerzu, polewamy je stopionym masłem z szałwią. Możemy oprószyć parmezanem i pokruszonymi amaretti.

For 4 portions  - 5 ravioli per person

Ingredients:

1 butternut pumpkin

1/2 cup grated Parmesan cheese
1 cup ricotta
1 egg yolk
Zest and juice of the lemon
salt and pepper

white of the egg lightly beaten

4 tbs butter
20 sage leaves
Cut the butternut squash into two parts, use only the part without  pits.

Peel the thick part of the butternut squash and cut on the mandoline into the thin slices.

In a bowl mix the ricotta, Parmesan cheese, egg yolk with zest and lemon juice.  Season with salt and pepper.


Put one slice of pumpkin on a cutting board. In the middle  put the teaspoon of the ricotta filling. Brush the edges with the egg white, cover with the other slice and glue the two together. 

Put aside.

Repeat with the other pumpkin slices and filling.

In two pans that would hold all the ravioli at the same time melt the butter until lightly golden and giving caramel aroma. Add the ravioli all at once together with sage leaves and fry, turning the ravioli once, until  the butter is dark golden and sage leaves get crispy. 

Divide the raviolis among four plates, pour the melted butter and sage on top. The ravioli can be sprinkled with shaved Parmesan cheese and crushed amaretti.




TOSKAŃSKA ZUPA WARZYWNA - RIBOLLITA - TUSCAN VEGETABLE SOUP



Bardzo mnie cieszy renesans rynków farmerskich. Tradycja zakupów świeżych warzyw i  owoców na lokalnych rynkach od zawsze tu występowała. Ale te ryneczki to pojawienie się nie spotykanych wcześniej odmian warzyw i owoców.

I tak na tych rynkach w sprzedaży znajdziemy jarmuż, złote buraki ćwikłowe, fioletowe  ziemniaki, kolorowe marchewki czy topinambur. Można czasami kupić buraki liściaste, miłą odmianę po powszechnie występującej botwince.

Nie wspomnę o kilkudziesięciu odmianach pomidorów starych odmian, które sierpniu i wrześniu, za pośrednictwem uroczej pary pasjonatów hodowców gościły na farmerskim rynku koło mojego biura.

Ostatnio u mojego zaprzyjaźnionego producenta pojawiła się kapusta toskańska. Nazywana inaczej kapusta czarną - cavolo nero lub czarnym jarmużem– typowy składnik zupy ribollita.

Ribollita to odmiana warzywnej zupy minestrone - warzywa, fasola, pomidory i kapusta toskańska. Bardzo gęsta, pożywna i zdrowa. Nazwę swoją  zawdzięcza  temu, że najlepiej smakuje po podgrzaniu, ribollita – czyli gotowana 2 razy.

Jeżeli nie będziecie mieć szczęścia i kupić cavolo nero – proponuję użyć popularnego ostatnio  jarmużu. Efekt podobny.

I am so glad the farmers’ markets are undergoing their renaissance in this country recently. The tradition of buying fresh produce on farmers’ markets has always been strong in this country.

However, with the emergence of the new farmer’s markets there is an array of fruits and vegetables that were long forgotten. And so the farmers are producing kale, which is becoming widely popular. You can buy golden beets, chioggias and Swiss chard and violet potatoes or Jerusalem artichokes. Not so obvious produce to buy a few years back. I was especially happy when on the stalls of one my befriended producer I happened to come across cavolo nero.

Called also Tuscan cabbage this cabbage plays important role in the preparation of traditional Tuscan soup ribollita.

Ribollita is a version of minestrone, vegetables, tomatoes, cannellini beans and cavolo nero.
A thick soup, healthy and comforting. It derives its name from it improving the taste with reheating. Ribollita – cooked two times

If you are not lucky to buy cavolo nero – you can substitute kale for a similar effect.

4 małe marchewki, pokrojone w plasterki
1 pietruszka pokrojona w plasterki
2 gałązki selera naciowego pokrojone w 0,5 cm plasterki
2 cukinie pokrojone w kostkę
2 pomidory
1 pęczek kapusty toskańskiej lub jarmużu
2 szklanki ugotowanej fasoli cannelini lub 1 słoik 500ml fasoli gotowej

kilka różyczek brokuła ugotowanego na parze
zielona pietruszka
parmezan
grzanki z ciabatty lub wiejskiego chleba
oliwa z oliwek

W dużym garnku rozgrzewamy olej, dodajemy cebulę i lekko podsmażamy. Do garnka dodajemy marchew, por, seler i pietruszkę i ząbek czosnku w łusce. Podsmażmy warzywa przez kolejną chwilę, dodajemy do tego kurczaka. Zalewamy wodą, dodajemy tymianek i liście laurowe. Doprawiamy wszystko pieprzem i solą i gotujemy na małym ogniu przez pół godziny.

Zestawiamy z ognia i odcedzamy. Usuwamy rozgotowane warzywa.

Przelewamy wywar do garnka. Dodajemy do zupy pokrojone warzywa: marchewki, pietruszkę i gotujemy przez 10 minut aż warzywa zmiękną, następnie dodajemy seler naciowy, pokrojoną cukinię i pomidory. Gotujemy następne 10 minut. Doprawiamy zupę do smaku pieprzem i solą. Na koniec do zupy dodajemy fasolę i cavolo nero lub jarmuż – usunięte łodygi i pokrojone na cienkie paseczki.

Podajemy ze struganym parmezanem, zieloną pietruszką, brokułem. Posypujemy grzankami i polewamy oliwą.

for 4-6 portions

Ingredients:

stock:
2 roast chicken leftovers or just water for vegetarian version
1 tablespoon of olive oil
1 onion
1 clove garlic
1 carrot, coarsely chopped
1 parsley, coarsely chopped
1 piece of celeriac, diced
1 small leek
1.5 liters of water
4 sprigs thyme
2 bay leaves
sea ​​salt and freshly ground black pepper

soup:
4 small carrots, sliced
1 parsley  root cut into slices
2 sprigs of celery, cut into 0.5cm slices
2 zucchinis,  cut into cubes
2 tomatoes, chopped
1 bunch of Tuscan cabbage or kale
2 cups cooked beans or 1 big jar of cannelini beans

some broccoli florets steamed
parsley
parmigiano
toasted ciabatta or country bread
olive oil

In a large saucepan warm up the oil, add the onion and fry lightly. Into the pot add carrots, leeks, celeriac and parsley and a clove of garlic in the husk. 

Fry the vegetables for another minute, add the chicken and pour water. Add the thyme and bay leave and season everything with salt and pepper and cook over low heat for half an hour.

Remove the soup from the heat and drain. Discard the cooked vegetables.

Pour the broth into the pot. Add to the soup the chopped vegetables: carrots, parsnips and cook for 10 minutes until the vegetables are softened, then add celery, chopped zucchini and tomatoes. Cook for another 10 minutes. Season the soup to taste with salt and pepper. At the end to the soup add the beans and cavolo nero or kale - stems removed and cut into thin strips and cook for another 10 minutes.

Serve with shaved parmesan, parsley, broccoli. Put some  croutons on top   and drizzle   with  olive oil.
