GRUSZKI W CIEŚCIE FRANCUSKIM - PEARS IN FRENCH PASTRY


Podejrzałam podobne gruszki na Pintereście, a i ostatnio w magazynie Elle a Table znalazłam trochę ich inną wersję. No więc podjęłam próbę i okazało się to być całkiem proste. I pyszne!

Chrupiące francuskie ciasto, soczysta gruszka i płynna czekolada. Koniecznie jemy na ciepło! A do tego lody waniliowe. Fantastyczna tarta!

I saw similar pear tartelettes on Pinterest, saved them, and recently in Elle a Table magazine I saw a different version of pears in pastry.

And so I finally got down to making them and it turned out pretty easy. And delicious too!

Flaky French pastry, juicy, not overly sweet pears and chocolate oozing from the pear. Definitely to be eaten hot straight from the oven. Accompanied by the vanilla ice cream. What a fantastic tart!

8 gruszek zawiniętych w ciasto

Składniki:

8 gruszek średniej wielkości, konferencja lub bartlett
skórka i sok z jednej cytryny
tabliczka gorzkiej czekolady

ciasto francuskie gotowe
1 jajko do smarowania
cukier palmowy

do podania lody waniliowe

Obieramy gruszki ze skórki, łyżeczką do wycinania kulek  wycinamy z nich gniazda nasienne. Gruszki posypujemy skórką i skrapiamy sokiem w z cytryny. Do środka gruszki wkładamy kawałki gorzkiej czekolady. Odstawiamy.

Ciasto francuskie rozwałkowujemy na  kwadrat o bokach ok 30cm. Wycinamy z niego paski o wymiarach 30 x 3,5 cm.

Owijamy gruszkę spiralnie ciastem pamiętając, aby ciasto zakrywało spód gruszki. Układamy gruszki na sztorc w kokilkach lub foremkach na tarteletki.

Wierzch ciastek smarujemy jajkiem i nakłuwamy ciasto z wierzchu. Posypujemy cukrem palmowym.

Pieczemy ciastka przez 30 minut w temperaturze 180 stopni.

8 pears in pastry

Ingredients:

8 medium size pears, conference or bartlett
zest and  juice of one big lemon
3,5 oz. bitter chocolate

French pastry
1 egg
palm sugar

vanilla ice cream

Peel the pears  and with a melon baller remove the pits. Scatter some zest all over the pears and sprinkle them with the lemon juice. Break the chocolate into smaller pieces and insert them into the pear’s cavity. Put aside while you roll the pastry.

Roll the French pastry into a rectangle size 12x12 inches. Cut the pastry into stripes about wide about 1 and 1/2 inch.

Roll the pastry around the pear making sure the bottom of the pear is covered with the pastry. Put the pears upright into the ramekins or tartelette forms.

Brush the pastry with the whisked egg and prick the pastry with the fork. Sprinkle the palm sugar all over the pastry.

Bake the cakes in the 350F oven for half an hour or until the pastry is nice golden-brown color.



SAŁATA Z POMIDORÓW Z GRANATEM - TOMATOES AND POMEGRANATE SALAD



Sałatka  ta powstała z resztek pomidorów. Miałam jeszcze kilka pomidorów starych odmian. Pokroiłam je w plastry i użyłam do tartinek. Trzeba było jakoś wykorzystać końcówki pomidorów w pięknych kolorach, wybór więc padł na tę sałatkę.

Nosiłam się z zamiarem zrobienia jej już od dawna, konkretnie od  ponad roku, kiedy to dotarła do mnie książka Plenty More Yotama Ottolenghi. Bardzo mi się spodobało połączenie pomidorów z granatem. W swojej wersji wykorzystałam dodatkowo pieczony bakłażan i pieczone papryki.

Ale co do idei, z kilkoma modyfikacjami sałatka to oddaje ducha tej sałatki z książki.

I made this salad from the remnants of the heirloom tomatoes I had left from making the tartines. I put the thick slices on top of the tartines and had to use up the rest of those beautifully colored tomatoes. So I decided on making this salad.

Actually had  I wanted to make it ever since I laid may hands of the Yotam Ottolenghi cook book Plenty More. I got enamored in the combination of the tomatoes with the pomegranate.

I additionally used roasted eggplant and peppers in my version. However, aside from that , my version is basically the same in spirit as the one in the cookbook.

Bakłażan kroimy w poprzek na grube plastry, posypujemy solą i odstawiamy na ok. 20 minut, aby się spociły. Opłukujemy i dokładnie osuszamy.

Osuszone plastry doprawiamy pieprzem i solą, skrapiamy lekko oliwą i posypujemy posiekanym ząbkiem czosnku i pieczemy w piekarniku w 180 stopniach aż lekko zbrązowieje, ok. 30 minut..

Razem z bakłażanem pieczemy papryki, aż skórka będzie pomarszczona, a  w niektórych miejscach czarna. Po ostudzeniu obieramy skórkę i usuwamy pestki.

Pomidory, paprykę, bakłażan i cebulę kroimy w drobną kostkę. Mieszamy wszystko w dużej misce.

W oddzielnym naczyniu mieszamy razem oliwę, ocet, szczyptę ostrej papryki, mielone ziele angielskie, melasę i sól.

Zalewamy sosem pokrojone warzywa i mieszamy. Posypujemy warzywa nasionami granatu i listkami oregano i mięty.

For 4 portions

Ingredients:

2 cups cherry tomatoes, red and yellow or a variety of heirloom tomatoes in different colors
1 red pepper, roasted, cooled and  skin removed
1 yellow pepper, roasted, cooled  and skin removed
4 thick slices of eggplant, brushed with olive oil and roasted with a small clove of garlic
1 medium size red onion finely chopped
½ tsp. ground allspice
a pinch of Aleppo pepper
2 tsp red wine vinegar
1,5 tsp pomegranate molasses
2 tbs olive oil
pomegranate seeds
1 tbs oregano leaves
1 tbs mint leaves

Cut the eggplants crosswise into thick slices. Place the eggplant slices in a bowl with some salt and set aside for 20 minutes to remove bitterness. Rinse them well and drain.

Put the eggplant in the roasting pan,  season with salt and pepper, sprinkle with chopped garlic clove, brush with some olive oil and roast in the 350 F oven for about half an hour. Roast the whole peppers and together with the eggplant until peppers are slightly charred.

Chop the cooled eggplant finely. Remove the skins from slightly cooled peppers, and chop them as well. Place the chopped vegetables in the bowl, add chopped  tomatoes and red onion.

In a separate bowl mix together the olive oil, vinegar, Aleppo pepper, ground allspice, pomegranate molasses and salt. Mix well and pour over the vegetables and mix well.

Sprinkle pomegranate seeds on top and garnish with oregano and mint leaves.


ZUPA MISO RAMEN Z CUKINIĄ - ZUCCHINI RAMEN MISO SOUP



W poszukiwaniu sposobu by zrobić tę zupę nisko-węglowodanową, skierowałam się w stronę cukinii aby zrobić z niej makaron, którym mogłabym zastąpić makaron ramen.

To nic nowego, bowiem makaron z cukinii to ostatnio bardzo popularny składnik.

Ta zupa nabrała mocnego smaku umami dzięki dwu składnikom, które tutaj wykorzystałam – to grzyby shitake i pasta miso nadały jej ten smak.

Umami to piąty smak, obok słodkiego, słonego, kwaśnego i gorzkiego. To smak określany jako mięsny, sprawiający, że jedzenie jest pyszne i bardzo sycące.

Bogaty, grzybowy wywar połączony z zielonymi warzywami oraz świeżą cukinią i marchwią to sycąca zupa, doskonała nie tylko na jesienny posiłek.

In my search to make this soup low-carb  carb, I turned to zucchini to replace the ramen noodles. It is nothing new, for the zoodles, as they are called, have become quite popular recently.

This zucchini ramen soup gets its full flavor from umami-rich ingredients I used to make it - shitake mushrooms and miso paste.

Umami is the fifth of the basic tastes like sweet, salty, sour, and bitter. It is a taste that makes the food taste delicious and makes you feel satiated.

A rich mushroom broth combined with green vegetables and fresh zucchini and carrot noodles make this dish a comforting, hearty option for a chilly night for fall.

2 łodygi selera naciowego
odcięte nóżki od grzybów shitake
1 cm kawałek ostrej papryczki

250 g grzybów shitake
2 łyżki pasty miso

1 zielona cukinia starta na tarce na długie nitki
2 duże marchewki starte na tarce na długie nitki
½  czerwonej ostrej papryczki
2 łyżki sosu sojowego
kolendra lub pietruszka zielona, posiekana
dwie dymki pokrojone w ukośne plasterki
4 jajka ugotowane
czarny sezam lub czarny kmin

Cebulę, marchewkę i seler kroimy w grubą kostkę i przekładamy do garnka. Od grzybów odkrawamy nóżki i dodajemy je do garnka. Dodajemy do warzyw całe ząbki czosnku, ostrą paprykę i imbir. Zalewamy zimną wodą, doprawiamy pieprzem i solą i gotujemy pod przykryciem na małym ogniu przez ok. 30 minut.

Przecedzamy zupę przez sito aby pozbyć się warzyw, przelewamy zupę z powrotem do garnka, a następnie dodajemy do zupy kapelusze od grzybów shitake pokrojone w plasterki. Gotujemy aż grzyby zmiękną. Odstawiamy z ognia i do wywaru dodajemy pastę miso.

W międzyczasie ścieramy na grubej tarce cukinię i marchewkę. Gotujemy jajka, studzimy lekko, obieramy i przekrajamy na pół.

Siekamy drobno pietruszkę lub kolendrę, dymkę i czerwone papryczki.

Do 4 misek nakładamy trochę marchwi i cukinii. Zalewamy warzywa gorącym wywarem wraz z grzybami. Posypujemy po wierzchu posiekanymi ziołami, papryczką i dymką. Pokrapiamy sosem sojowym, dodajemy jajka i posypujemy sezamem.

For 4 to 8 portions

Ingredients:

1 onion
2 cloves garlic
2 carrots
2 celery stalks
stems cut off from shitake mushrooms
½ inch jalapeno pepper
1 inch piece of ginger
salt and pepper
4 cups of water
10 oz. shitake mushrooms
2 tbs miso paste

1 big, firm zucchini, grated on the coarse side of the grater into long strips
2 big carrots grated on the coarse side of the grater into long strips
½ red jalapeno pepper
2 tablespoons soy sauce
cilantro or Italian parsley leaves
2 scallions cut sliced thin on the diagonal
4 eggs cooked shells removed
black sesame or black cumin

Wash and dry the vegetables. Peel and roughly chop the carrots, onion, parsley and celery.
Cut off the stems from the shitake mushrooms.

In a medium pot, add chopped vegetables together with shitake stems. To the same pot  add ginger, piece of jalapeno and garlic cloves. Add water, season lightly with salt and pepper and simmer  the broth on a low heat for about half an hour.

Strain the broth, discard the vegetables and put the clear broth back into the pot, add the mushrooms cups sliced into thin strips to the broth. Cook until the mushrooms are soft. Remove the soup from the heat and add miso paste.

While the broth is simmering, grate the zucchini and carrot. Cook the eggs. Slice thinly the scallions and jalapeno pepper. Chop the cilantro leaves.

Divide the zucchini and carrot noodles between four bowls, add the broth, trying to divide the mushrooms evenly.

Garnish with the scallions, cilantro and jalapeno. Pour some soy sauce on top. Add eggs cut side up. Sprinkle some black sesame seeds or nigella on top.




BAKŁAŻAN NADZIEWANY - STUFFED EGGPLANT



Znalazłam na Instagramie @readysteadyeat  piękne, pieczone, nadziewane  bakłażany. Zachwycił mnie pomysł, wykonanie oraz zdjęcie.

Marica jest włoszką, mieszka w Szwajcarii i robi przepiękne zdjęcia pięknym i pysznym potrawom.

Męczyły mnie te bakłażany według przepisu jej mamy tak bardzo, że postanowiłam je zrobić. Ale… pomysł tak, technika wykonania tak, składniki trochę inne.

Moją wersję wzbogaciłam o pieczone papryki. Nie dodałam też bułki tartej ani żadnego sera, tak więc jest to wersja wegańska. Po prostu pychota.

I found a picture of those roasted stuffed eggplants on the Instagram profile @readysteadyeat. I just loved the idea and picture of the dish.

Marica is an Italian living in Switzerland. She has got a lovely feed of beautiful pictures of delightful dishes.

I loved those eggplants so much that I decided to make my own version. Yet… while the idea is the same and the execution similar, the ingredientes were slightly changed.

In my version I omitted the breadcrumbs and cheeses, but added roasted peppers in their place. The result: vegan, rich, delicious  dish.

Bakłażany przekrawamy wzdłuż na pół. Nacinamy je na ukos w kratkę, nie przecinając miąższu do końca. Usuwamy łyżką miąższ.

Miąższ i skórę z bakłażanów posypujemy solą i odstawiamy na ok. 20 minut. Płuczemy i osączamy.

Miąższ doprawiamy solą i pieprzem, skrapiamy lekko oliwą i pieczemy w piekarniku w 180 stopniach aż lekko zbrązowieje, ok. 30 minut..

Razem z bakłażanem pieczemy ząbki czosnku, cebulę pokrojoną w kostkę oraz papryki w całości, aż skórka w niektórych miejscach będzie czarna.

Skórki bakłażana obgotowujemy w lekko osolonej wodzie przez kilka minut, odsączamy.

Pomidory blanszujemy, obieramy ze skóry i usuwamy nasiona. Siekamy pomidory w grubą kostkę. Upieczony bakłażan siekamy grubo. Papryki obieramy ze skórki i grubo siekamy. Czosnek wydobywamy z łupinek i siekamy lub rozcieramy.

Przekładamy posiekane warzywa do miski, doprawiamy pieprzem i solą, dodajemy zioła: tymianek, bazylię i pietruszkę. Wszystko dokładnie mieszamy i nadziewamy warzywami podgotowane skórki z bakłażana.

Układamy nadziane połówki bakłażana na blasze wyłożonej pergaminem, skrapiamy oliwą i pieczemy w piekarniku w 180 st.C przez ok 20 minut.

Wyjmiemy bakłażany z piekarnika, układamy je na półmisku, skrapiamy oliwą i posypujemy nasionami granatu i pietruszką.

Ingredients:

2 medium size eggplants
1 medium size red onion
salt and pepper
olive oil
2 cloves of garlic
1 red pepper
1 yellow pepper
4 medium size ripe tomatoes
thyme
basil
italian parsley
pomegranate seeds


Cut the eggplants in half, make crisscross incisions in the flesh, making sure not to cut the skin.

With a spoon remove the flesh and place it in a bowl with some salt and set aside for 20 minutes to remove bitterness. Do the same with the skins. Rince them well and drain.

Blanch the skins in slightly salted boiling water for a few minutes, then drain. Set aside.

Put the flesh together with the chopped onion in the roasting pan. Season with salt and pepper, pour some olive oil on top and roast in the 350 F oven for about half an hour. Roast the whole peppers and garlic at the same time until peppers are slightly charred.

Blanch the tomatoes, remove the skins, and chop the tomatoes roughly.

Chop the cooled eggplant flesh roughly. Remove the skins from slightly cooled peppers, and chop them as well. Add them to the bowl, add tomatoes, chopped garlic cloves, fresh thyme, basil and parsley. Season with salt and pepper.

Fill the eggplant skins with the stuffing,  place them in an oven dish, pour some olive oil on top and bake at 350F for about 20 minutes

Remove from the oven, sprinkle with pomegranate seeds and chopped parsley.



SAŁATKA TABBULEH, BEZ KASZY, Z CUKINIĄ, GRANATEM I PISTACJAMI - GRAIN FREE TABBULEH WITH ZUCCHINI, POMEGRANATE AND PISTACHIOS

Od kiedy spróbowałam sałatki tabbuleh po raz pierwszy, zakochałam się. Jest to bezsprzecznie moja ulubiona sałatka.

Pierwszy raz próbowałam ją wiele lat temu nad Jeziorem Galilejskim w piękny, upalny dzień. Była to prosta sałatka – bulgur, pietruszka, mięta, cebula. Ale jej świeży smak, który mnie wtedy zachwycił powraca we wspomnieniach co chwila.

Co tydzień, na bazarze kupuję wielki pęczek zielonej pietruszki. Uwielbiam pietruszkę, zawsze lubiłam. Ten metaliczny, świeży smak.  Dodaję posiekane listki do sałaty, makaronów, zup. Często robię pesto z pietruszki, no i oczywiście od jakiegoś czasu robię tabbuleh.

Ostatnio robiłam kilka wersji tabbuleh - z komosą czy kaszą jaglaną. Dzisiaj postanowiłam zrobić  z drobno posiekaną cukinią, która, drobno posiekana, imituje kaszę.  Doskonała!

Ever since I tried tabbuleh salad for the first time I fell in love with it right away.  It has been my favorite salad.

For the first time I ate it in a restaurant on a coast of Gallilee Sea one beautiful, hot summer day. It was basic – just bulgur, parsley, mint and onion. But it’s freshest taste ever haunts me until today.

Every week, on my farmer’s market, I buy a huge bunch of fresh parsley. Love parsley, always have. Mainly for it’s metallic freshness. A little added to a soup, a salad, pasta imparts its wonderful freshness. I often make parsley pesto, and for some time now tabbuleh.

Recently I was making the salad with the gluten free grains like quinoa or millet groats. This one has got minced zucchini in place of groats. And I tell you – it is perfect!

1 zielona cukinia średniej wielkości
1 żółta cukinia średniej wielkości
2 dojrzałe pomidory średniej wielkości
1 cebula czerwona, średniej wielkości
skórka otarta z jednej cytryny
sok z cytryny
sól i pieprz
2 łyżki oliwy z oliwek
1 duży pęczek zielonej pietruszki
1 mały pęczek mięty
1 owoc granatu – nasiona
garść pistacji

Cukinię zieloną i żółtą drobno siekamy, najlepiej pokroić w malutką kosteczkę o rozmiarach ok. 0,5 cm lub mniejszą. Pomidory kroimy w małą kostkę. Cebulę czerwoną drobno siekamy.

Liście pietruszki i mięty siekamy grubo. Łączymy wszystkie składniki sałaty w dużej misce. Warzywa skrapiamy sokiem z cytryny.

Doprawiamy wszystko skórką z cytryny, solą i pieprzem. Polewamy sałatkę  oliwą i dokładnie mieszamy.

Pistacje wyjmujemy z łupinek, i siekamy na mniejsze kawałki (można rozgnieść w moździerzu).  

Na koniec, do sałatki dodajemy nasiona granatu. Mieszamy i podajemy posypane posiekanymi pistacjami.

Ingredients:

1 medium size green zucchini
1 medium size yellow squash
2 medium size tomatoes
1 medium size red onion
zest and juice from one organic lemon
salt and pepper
2 tablespoons olive oil
1 big bunch of Italian parsley
1 small bunch of mint
seeds from one medium size pomegranate
a handful of pistachios

Mince green and yellow zucchini into bits 1/5 inch size or smaller. Mince the tomatoes and red onion  into small dice.

Chop coursley the leaves of parsley and mint and put them into the bowl. Add minced zucchini, tomatoes and onion. Season with salt and pepper.

Zest the skin of organic, well washed lemon and add it together with the juice to the chopped vegetables. Pour the olive oil on the salad and mix it thoroughly.

Remove the pistachios from their shells and chop into smaller pieces.

Before serving remove the seeds from pomegranate and add to the salad. Sprinkle  with the chopped pistachios.



CHLEBEK CUKINIOWY PIECZONY W PATELNI - SKILLET BAKED ZUCCHINI BREAD



Podobnie jak inne moje wypieki - placuszki z cheddarem, cukiniowe mufinki czy babeczki z wędzonym serem -then chlebek można traktować jako posiłek sam w sobie.

Napakowałam tu tyle dobrych i zdrowych rzeczy: cukinię, marchewkę, suszone pomidory i fetę. Do tego bardzo wyraziście je doprawiłam. Tym razem oregano i cytryna oraz feta dodane do ciasta nawiązują do typowych greckich smaków.

Chlebek ten to przenośny posiłek,  wszystko w jednym – można go zabrać do pracy, do szkoły lub na piknik. Będzie pyszny sam lub z innymi dodatkami. Można użyć go jako bazę do kanapki.

Doprawić też go można według uznania i własnego smaku. Będzie pyszny w każdej postaci.

Just like my other savory breads: cheddar biscuits, zucchini muffins or smoked cheese cakes, this bread is a whole meal in itself.

I have loaded it will lots of tasty and healthy ingredients: zucchini, carrot, sun dried tomatoes and original sheep milk feta. What more, the bread is intensly seasoned. Oregano and lemon in the seasoning enhance the Greek chracter of the bread.

Perfect meal to go – can be taken to work, school or for a picnic. Will be delicious eaten alone or with other ingredients. I will be a tasty base for a sandwich.

My seasoning and choice of ingredients can be treated as guidelines only,  leaving room to make the bread made to your liking. It will be great in any way.

jeden chlebek pieczony w patelni żeliwnej lub 12 mufinek

Składniki:
1 i 1/2 szklanki mąki bezglutenowej  lub mieszanki  mąki owsianej, kukurydzianej i ziemniaczanej
1 łyżeczka proszku do pieczenia
1 łyżeczka sody oczyszczonej
1 łyżeczka szarej soli morskiej
1/2 łyżeczki czarnego pieprzu
1 cm kawałek papryczki jalapeno, drobno posiekany
1 cukinia starta na grubej tarce (najlepiej zielona i żółta)
1 marchewka starta na grubej tarce
1 szklanka oryginalnej greckiej fety owczej, pokruszonej
½ szklanki suszonych pomidorów, posiekanych
1 łyżka posiekanej bazylii
1 łyżka posiekanego oregano
4 łyżki posiekanej zielonej pietruszki
4 łyżki posiekanego szczypiorku
4 jajka
1/4 szklanki maślanki
4 łyżki oliwy z oliwek
skórka i sok z jednej cytryny
1 łyżka miodu

Rozgrzewamy piekarnik do 180 stopni C.

W misce przesiewamy: mąkę, proszek do pieczenia, sól i pieprz.

W osobnym naczyniu łączymy ze sobą startą cukinię, startą marchew, jalapeno, szczypior, pietruszkę, oregano i bazylię. Dodajemy pokruszoną fetę i posiekane pomidory.

Do warzyw dodajemy suche składniki i rozprowadzamy je równomiernie.

Rozdzielamy jajka. Białka ubijamy na sztywno.

Żółtka ubijamy z miodem aż podwoją swoją objętość. Dodajemy do ubitych żółtek skórkę i sok z cytryny, oliwę oraz maślankę, ubijamy chwilę a następnie przelewamy do warzyw i mąki, rozprowadzamy równomiernie.

Do ciasta dodajemy ubite białka  w trzech częściach delikatnie mieszając.

Przekładamy ciasto do żeliwnej patelni, tortownicy albo foremek na mufinki i  pieczemy w piekarniku przez ok. 40-45 minut, aż będą złote.

1 cup (2 small zucchinis)  coarsely grated well-scrubbed zucchini – preferably green and yellow
½ cup coarsley grated carrot
1 tbs  finely chopped fresh basil leaves
1 tbs fresh oregano, leaves only
4 tbs minced Italian parsley
4 tbs minced scallions green part
1 cup crumbled greek sheep feta
1/2 inch piece of red jalapeno pepper, minced
½ cup sun-dried tomatoes, chopped
4 large eggs
1 tablespoon honey
4 tablespoons olive oil
1/4 cup buttermilk
juice and zest of one lemon


Preheat the oven to 350 degrees F.
Sift or whisk together the flour, baking powder, baking soda, salt and pepper  into a large bowl.
In a separate bowl mix together the grated zucchini, carrot, oregano, parsley, scallions and basil. Add the crumbled feta, sund dried tomatoes and japaleno. Distribite evenly and combine with the dry ingredients.
Separate the eggs. Beat the whites until stiff.
Whisk the yolks with the honey until doubled, add olive oil, buttermilk and lemon. Beat more then pour into the bowl with the dry ingredients and blend well. Add the whites in three parts.
Spoon the batter into oiled 10 inch cast iron skillet  or muffin tins, filling to the brim.
Bake for 40-45 minutes or until a toothpick inserted into the middle comes out clean.
