WIOSENNY HUMMUS Z BOBU - SPRING FAVA BEAN HUMMUS




Mam to szczęście, że mieszkam koło pięknego, zabytkowego pałacu z rozległym parkiem wokół.

Przez wiele lat w neo-gotyckim pałacu z XVIII wieku mieściło się liceum. W zeszłym roku, po wieloletnim remoncie, pałac został zmieniony w butikowy hotel z wytworną restauracją, a zaniedbany park został zrewitalizowany.

Dzisiaj miło jest przejść się pięknymi alejkami, posiedzieć nad stawem, podziwiać wspaniałą zieleń jaką spotykamy tylko w maju!  

Dlatego ten humus z bobu ze świeżymi ziołami jest hołdem dla pięknej majowej zieleni.

I happen to live next to a beautiful, old palace and park.

For many years, the eighteen century neo gothic palace was used a seat of a high school. Then it was closed, and a year ago,  after some years of reconstruction, finally a boutique hotel with a very good restaurant emerged. And the best of all the derelict park was finally revitalized and opened to the public.

It is nice to go for a stroll in a park, sit by a pond, enjoy the beautiful May greenery. As my windows overlook the park I am able to notice the changes the seasons bring to the park.

To reflect the beautiful May greenery I prepared the hummus from the first of the season favas. I made it the Polish way with lots of dill,  ramps  and freshly made extra vergin, cold pressed canola oil.

Składniki:

2 szklanki ugotowanego bobu
4-5 liści czosnku niedźwiedziego
olej rzepakowy
sok z cytryny
po 2 łyżki siekanego szczypioru, pietruszki i kopru
sól i pieprz

Bób gotujemy w wodzie z koprem, czosnkiem i szczypiorem. Studzimy i z szarych osłonek wydobywamy zielone środki.

Zielony bób przekładamy do malaksera. Dodajemy sok z cytryny, pietruszkę, koper, liście czosnku niedźwiedziego, szczypior i olej rzepakowy. 

Miksujemy na gładką masę. Doprawiamy solą i pieprzem, oraz dodatkowo cytryną i olejem, do smaku. Miksujemy aż pasta będzie bardzo gładka.

Przekładamy do słoiczka, na wierzchu polewamy olejem. Przechowujemy w lodowce do tygodnia.

Ingredients:

2 cups cooked fava beans, green beans removed from the pods
4-5 ramsons
cold pressed canola oil
lemon juice
2 tablespoons each: chopped chives , parsley and dill
salt and pepper

Cook the favas  in salted water together with dill, garlic and chives . Cool the down and remove the green beans from the gray casings. .

Put the green beans into a food processor. Add the lemon juice , parsley , dill , ramps, chives and canola oil . Blend until smooth .

Season to taste with salt and pepper, add  more lemon juice and oil, to taste. Blend until the paste is very smooth.

Put the paste into a jar, pour some oil on top.

Store in the refrigerator up to a week .








MROŻONY SYROP Z RABARBARU - RHUBARB GRANITA



Bardzo charakterystyczna dla Sycylii, granita, zmrożony sok owocowy to idealna ochłoda na upalne dni. Bardzo tam popularna, co parę kroków, w każdym mieście Sycylii  możemy spotkać bary z granitą.

Uwielbiam granitę cytrynową, pistacjową i z owoców morwy. Zawsze możemy ją zrobić sami. Już pokazywałam wam jak zrobić granitę z tymianku i czerwonych pomarańczy.

Na wiosenne, gorące dni idealna będzie granita rabarbarowa. Zrobiona z cierpkiego rabarbaru, tak lubianego przez wszystkich. Niezwykle orzeźwiająca.

When I was spending vacation time in Sicily I loved to refresh myself with the very characteristic for Sicily frozen fruit juice – granita. It is a perfect refreshment for hot summer days.

It sure is very popular dessert there. You can come by the granita parlor on almost every corner of every town or village.

Everyday we took a bus to Siracuse where we went to a granita bar and then we used to sit on the steps of Santa Lucia Church or Duomo and eat our wonderful black mulberry granita. I would sit there and remember the scenes from one of my favorite movies - Malena, with Monica Belucci walking along the piazza del Duomo.

What I love is the lemon granita, pistachio and mulberry. Luckily enough we can make it ourselves.

Already I showed you how to make thyme tisane granita and blood orange granita.

For hot, spring days a rhubarb granita work the trick. Made with tart rhubarb, everybody seems to like, it is a perfect refreshment when the weather turns from warm to hot.

Składniki:

1 duży pęk rabarbaru
skórka i sok z 1/2 cytryny
kilka płatków hibiskusa
cukier z brzozy do smaku
2 szklanki wody


Zagotowujemy wodę w garnku, dodajemy obrany i pokrojony na kawałki rabarbar. Dodajemy skórkę i sok z cytryny oraz kilka płatków hibiskusa. Dosładzamy cukrem z brzozy do smaku.

Zestawiamy kompot z ognia i zostawiamy do ostygnięcia.

Przecedzamy kompot przez gęste sito, wyciskamy sok i usuwamy pulpę.

Syrop z rabarbaru przelewamy do torebki z zamkiem i mrozimy położone na płasko.

Zmrożony sok połamany na kawałki przekładamy do blendera i nożami do rozdrabniania lodu miksujemy do uzyskania konsystencji zmrożonego śniegu.

Przekładamy ponownie do pojemnika. Przechowujemy w zamrażarce.

Ingredients:

1 large bunch of rhubarb
zest and juice of 1/2 lemon
several petals of hibiscus
birch sugar to taste
2 cups water


Boil water in a pot, add the rhubarb peeled and cut into pieces. Add the zest and lemon juice and a few petals of hibiscus. Sweeten  with birch sugar to taste.

Take the compote from the heat and put aside to cool down.

Strain the syrup through a fine mesh sieve, squeeze the juice and discard the pulp.

Pour the rhubarb syrup into the zip-lock bag and freeze laying flat.

Brake the frozen juice into pieces and put it into a blender. With the knives for the ice chop the frozen syrup until you get the consistency of the slushed snow.

Put back into the container. Store in the freezer.


BRIOSZKA Z KREMEM CZEKOLADOWO-PISTACJOWYM - PISTACHIO AND CHOCOLATE BRIOCHE



Powiem tak: to najlepsza drożdżówka jaka udało mi się kiedykolwiek zrobić. Co za smak!  

Brioszka to moja ulubiona drożdżówka. Pełna smaku masła i niezbyt słodka.

Niedawno przeczytałam, że w tym roku hitem jest babka drożdżowa przetykana kremem czekoladowym. Składa się, przcina  i skręca ciasto drożdżowe do uzyskania wewnątrz żyłek kremu czekoladowego.

A, że w zaprzyjaźnionym z LUK&KUK kupiłam genialny krem czekoladowo-pistacjowy Comptoirs du Mathilde, naturalny, organiczny i pyszny - zastosowanie wydało mi się oczywiste.

Tak więc, oto brioszka przetykana kremem, o niezwykle bogatym smaku karmelu, pistacji i czekolady.

In one of the latest issues of Bon Apetit magazine I found a note that chocolate babka is the new bagel. Something that is very en vogue this summer.

The shot of the babka with its many mesmerizing swirls and folds of chocolate appealed to me so much that I had to make something of the sort.

Moreover, I got this wonderful Comptoirs du Mathilde chocolate pistachio cream – organic, natural and oh so tasty. The choice seemed natural.

My brioche style babka with swirls of chocolate cream, brown butter and slightly salty pistachio streusel  is just heaven. I know the chocolate pistachio cream is hard to find so you can substitute Nutella or any other good quality chocolate cream. :) But try it by all means!

Na ciasto mieszczące się w tortownicy o średnicy 24 cm


Składniki:


½ szklanki mleka, podgrzanego 

1 paczka aktywnych suchych drożdży (około 2¼ łyżeczki) 

¼ szklanki cukru demerara 

1 duże jajko 

1 duże żółtko 

½ łyżeczki soli

2 szklanki mąki, plus więcej do posypania 

7 łyżek niesolonego masła stopionego, sklarowanego, ostudzonego do temperatury  pokojowej


Krem Comptoirs du Mathilde czekoladowo-pistacjowy, Nutella lub krem czekoladowy wysokiej jakości.


kruszonka: 

50 g masła w temperaturze pokojowej

6 łyżek mąki

szczypta soli

¼ szklanki brązowego cukru

garść pistacji 


Wlewamy szklankę podgrzanego mleka do małej miski; dodajemy drożdże i szczyptę cukru. Odstawić do czasu aż się spieni, około 5 minut.


Ubijamy jajka, żółtka oraz pozostałą część cukru, sól i wanilię aż będzie puszyste. Dodajemy spienione drożdże. 


Wsypujemy 2 szklanki maki do miski i dodajemy do tego masę z jajek i drożdży. Mieszamy drewniana łyżką, aż wszystko się połączy.


Dodajemy roztopione, skarmelizowane i ostudzone masło i ubijamy, aż masło się całkowicie połączy z mąką.


Wykładamy ciasto na posypaną mąką stolnicę i zagniatamy, aż ciasto będzie gładkie i elastyczne.

Przekładamy do dużej miski wysmarowanej masłem. Przykrywamy folią i pozostawiamy by rosło w ciepłym miejscu, aż podwoi objętość, przez 1½-2 godzin, a następnie schładzamy w lodowce przez 45 minut do 12 godzin.


Rozgrzewamy piekarnik do 175°. Smarujemy masłem tortownicę.


Wykładamy schłodzone ciasto na czystą lekko posypaną mąką stolnicę.


Rozwałkowujemy na prostokąt o rozmiarze 20X40 cm.


Łopatką do smarowania smarujemy ciasto kremem, do samych brzegów.  Zwijamy ciasto jak roladę. Ponownie spłaszczamy i składamy na 3, rozwałkowujemy ponownie i ponownie zwijamy jak roladę.


Tniemy ciasto na 12 kawałków o szerokości ok. 5 cm. Układamy w tortownicy na sztorc, przykrywamy folią i pozostawiamy na 30 minut do wyrośnięcia.


Przygotowujemy kruszonkę. W małej miseczce ubijamy szpatułką masło, dodajemy składniki w kolejności jak wyżej, za każdym razem dobrze mieszając, zanim dodamy kolejny składnik.

Studzimy przez 15 minut w formie, a następnie luzujemy brzegi nożem, wyjmujemy z blaszki i przekładamy na stojak. Studzimy kompletnie przed krojeniem.


Makes one 10 inch cake 

Ingredients: 

dough

½ cup whole milk, warmed

1 ¼-ounce envelope active dry yeast (about 2¼ teaspoons)

¼ cup demerrara sugar, plus more

1 large egg

1 large egg yolk

1 tsp vanilla extract

½ teaspoon kosher salt

2 cups all-purpose flour, plus more for surface

7 tablespoons unsalted butter, melted and cooked until it smells caramel like, then  cool until room temperature and color becomes opaque


Ready made Comptoirs du Mathilde chocolate pistachio cream, Nutella or any other good quality organic chocolate cream


streusel

4 tablespoons butter, room temperature

6 tablespoons flour

a pinch of salt

¼ cup demerrara sugar

a handful of pistachios  

Pour milk into a measuring glass or small bowl; sprinkle yeast and a pinch of demerrara sugar over milk. Let stand until foamy, about 5 minutes.  

Whisk egg, egg yolk, salt and vanilla extract with the remaining ¼ cup demerrara in a medium bowl until smooth. Whisk in yeast mixture. 

Combine 2 cups flour in the bowl. Add egg mixture and beat with a wooden spoon until almost incorporated, about 30 seconds. Add butter all at once and beat the dough until the butter is almost incorporated.


Turn out dough onto a lightly floured surface and knead a few times until very smooth. Transfer to a large buttered bowl. Cover with plastic wrap and let rise in a warm place until doubled in size, 1½–2 hours, then chill for 45 minutes or up to 12 hours.

Preheat oven to 350°. Generously butter a 10 inch round pan.


Turn out the chilled dough onto a clean lightly floured surface. Roll out to a 22x12" rectangle and orient so a long side is facing you.


Using an offset spatula, spread chocolate filling over dough to extend to the edges. Roll up dough away from you like a jelly roll, pulling lightly on it as you roll to maintain thickness. Fold the dough in thirds as if you would fold a letter and flatten it. Roll up the dough again and cut crosswise into 12  2-inch pieces. 

Set the dough upright into the buttered round cake pan. Cover with plastic wrap and let rise 30 minutes. 

Meanwhile, make the streusel. Whisk brown sugar and ½  tsp. salt in medium bowl to blend. Mix in remaining 2 Tbsp. butter. Add flour and ground pistachios and toss with a fork until moist clumps form (streusel will look slightly wet).


Whisk egg in a small bowl and brush egg wash over loaf. Scatter streusel over top. Bake the cake, rotating pan halfway through, until golden brown, 50–60 minutes.

Transfer pan to a wire rack and let brioche to cool in pan for 15 minutes, then turn out onto rack, running a paring knife around edges to help loosen if needed. Let cool completely before slicing.






KLASYCZNA SAŁATA Z MNISZKA Z JAJKIEM - CLASSIC DANDELION SALAD WITH POACHED EGG



Nowa wersja sałaty lyońskiej - tradycyjnie francuskiej sałaty z jajkiem i bekonem na ciepło – dzisiaj z mniszkiem i kremowym ale wyrazistym sosem z boczku, musztardy i śmietany oraz maślanki.

Klasycznie robi się tę sałatę z sałaty frisee lub endywii, czyli sałat gorzkich. Tym razem zrobiłam ją z liści mniszka lekarskiego. Chciałoby się powiedzieć sałatka z tego co można zebrać z łąki, tyle, że liście mlecza kupiłam na  moim lokalnym rynku.

Najlepsze są młode liście mlecza a smakują trochę gorzkawo, pieprzowo  i dobrze smakują z musztardą i miodem.  

Mlecz, który wiosną ukwieca nasze trawniki i łąki, postrzegany jest jako chwast. Jest rośliną bardzo cenioną rośliną w ziołolecznictwie. Jest niezastąpiony w leczeniu kamicy żółciowej, anemii czy reumatyzmu.

Doskonale się też sprawdza w sałatce lyońskiej w zestawieniu z ciepłym bekonowo-musztardowym sosem i aksamitnym jajkiem z koszulce.

The new version of salade lyionnaise - traditional French salad with poached egg and warm bacon mustard auce - today with the dandelion leaves and creamy but distinctive sauce with bacon, mustard, cream and buttermilk.

Classically this salad is being made with frisee or endive lettuce with their bitter leaves well standing out to mustard dresssing.

This time I made the salad with dandelion leaves. One would  say a salad you would normally forage for, except that the leaves of dandelion were bought at my local market.

I would recommend using young leaves only, and the ones from the plants that  have not bloomed yet. They are the best, not too bitter and tasting perfectly with mustard and honey.

Dandelion seen as a weed is the plant that  in the spring covers our lawns and meadows, is seen as a weed. It is a plant that is highly valued  in medicine. It is indispensable in the treatment of gallstones, anemia and rheumatism.

It also perfetly works in this salad combined with warm creamy- bacony – mustardy sauce and velvety poached agg.

4 plasterki bekonu

4 szklanki młodych liści mniszka pospolitego lub rukoli

 sos
1 czerwona cebula
pieprz i sól
1 łyżka octu z sherry
1 łyżka musztardy ziarnistej z dodatkiem piment d’espelette
2 łyżki oliwy z oliwek
4 łyżki maślanki
4 łyżki śmietany
listki z 2 gałązek tymianku

W dużym płaskim garnku zagotowujemy wodę z octem i solą.  Rozbijamy jajka do filiżanek. Mieszamy wodę bardzo intensywnie aby wytworzył się wir  i dodajemy jajka w sam środek wira. Wir w wodzie sprawi, że białka będą zwarte.

Przykrywamy garnek i gotujemy jajka na małym ogniu przez 3 minuty. Wyjmujemy jajka i kładziemy je na talerz przykryty ręcznikiem papierowym, aby odsączyć wodę.

Bekon smażymy na patelni aż wytopi się tłuszcz a kawałki bekonu będą chrupiące.

Do patelni dodajemy czerwoną cebulę pokrojoną w piórka, ocet, musztardę i oliwę.  Mieszamy wszystko dokładnie. Całość doprawiamy pieprzem. Po ostudzeniu mieszamy z maślanką, śmietaną i tymiankiem. Odstawiamy na pół godziny aby smaki się przegryzły.

Komponujemy talerz: najpierw kładziemy liście mniszka lub innej gorzkiej sałaty.  Na wierzchu kładziemy jajko i wszystko polewamy sosem i posypujemy kawałeczkami bekonu.

Można podać z chlebem, aby moc go moczyć w żółtku.

Serves 4 people

Ingredients:

poached eggs
4 eggs
vinegar
salt

4 slices  smoked bacon

4 cups young leaves of common dandelion or rocket

sauce
1 red onion
pepper and salt
1 tablespoon sherry vinegar
1 tablespoon grainy mustard with the addition of piment d'Espelette
2 tablespoons olive oil
4 tablespoons buttermilk
4 tablespoons cream
leaves from 2 sprigs of thyme

In a large shallow pot boil the water with vinegar and salt. Break eggs into the cups. Mix the water very hard to create a swirl and add the eggs in the middle of water, The movement of the water make the egg white to be supple.

When the egg whites become opaque, remove the eggs from the pot and transfer them over to the plates covered with aper towels.

Fry the bacon in a frying pan until the melts out and the  pieces of the bacon become crisp.
To the pan add the chopped red onion cut thinl, vinegar, mustard and olive oil. Mix everything thoroughly. Season with pepper.

After the sauce had cooled slightly add  the buttermilk, sour cream and thyme. Let stand for a few moments for the flavors to merge.

Compose a plate, first we put dandelion leaves or other bitter lettuce. On top place one poached  egg and pour the sauce  around the plate. Sprinkle with pieces of bacon on top.

Serve with country bread to soak up the egg yolk.





SORBET Z PIECZONYCH TRUSKAWEK - ROASTED STRAWBERRIES SORBET



Tak, to prawda, tymianek to moje ulubione zioło. Dodaję go do wszystkiego do czego tylko mogę. Czy to do dań wytrawnych czy deserów.

W deserach, szczególnie dobrze tymianek współgra z owocami pestkowymi. Ale kiedy znalazłam w książce Agricola Cookbook przepis na sorbet z pieczonych truskawek z tymiankiem, wiedziałam. Niech no tylko pojawią się truskawki – będzie sorbet!

Well, I believe thyme is my favorite herb, ever! I just cannot resist it. I add it to anything I can, be it savory or sweet.

In sweet dishes thyme marries perfectly with stone fruits. Sooo many such desserts I have made already. Only recently the apricot ice cream. But, when I found this dessert in the Agricola Cookbook, I knew it – if only the first strawberries arive – this dessert is a must!

Składniki:

8 szklanek dojrzałych truskawek, małych, umytych i pozbawionych szypułek
1 łyżka cukru brzozowego na 2 szklanki truskawek
skórka i sok z 2 cytryn
8 gałązek tymianku
1 łyżeczka świeżo zmielonego pieprzu
2 szklanki wody
2-3 łyżki miodu

Truskawki myjemy, przebieramy i pozbawiamy szypułek. Przekładamy truskawki do naczynia, dodajemy ksylitol (można cukier), sok i skórkę z cytryny, gałązki tymianku oraz świeżo zmielony pieprz.

Wstawiamy naczynie do rozgrzanego piekarnika i pieczemy w temperaturze 200 stopni przez ok 45 minut, do zgęstnienia syropu.

Przekładamy truskawki do płaskiego rondla, dodajemy wodę, stawiamy rondel na palniku i gotujemy na małym ogniu przez ok.30 minut.

Usuwamy gałązki tymianku, przekładamy truskawki do blendera i miksujemy na gładką masę z dodatkiem miodu. 

Przekładamy masę do worka z zamkiem, rozkładamy płasko w zamrażarce  i mrozimy do pełnego zamrożenia. Po zmrożeniu sorbetu przekładamy pokruszone kawałki ponownie do blendera i miksujemy do uzyskania gładkiej masy.

Przekładamy sorbet do pojemnika, zamykamy szczelnie i przechowujemy w zamrażarce.

Ingredients:

8 cups ripe strawberries, small, washed and without stalks
1 tablespoon of birch sugar for 2 cups of strawberries
zest and juice of 2 lemons
8 sprigs of thyme
1 teaspoon freshly ground pepper
2 cups water
2-3 tablespoons honey

Wash the strawberries thoroughly, pick the washed fruit and remove the stems. Put the strawberries into a non-corrosive baking pan, add xylitol (you can use sugar), juice and lemon zest, thyme sprigs and freshly ground black pepper.

Put the dish in the oven and bake the strawberries  at 200 degrees for about 45 minutes until syrup gets thick.

Transfer the baked strawberries into a saucepan, add water, put the pan on the burner and cook over low heat for about 30 minutes.

When cooled slightly remove thyme sprigs from the strawberries then place them in a blender and blend with honey until smooth.

Transfer the strawberries in a zip lock bag and when cooled place the bag flat in a freezer and freeze until firm.

When fully frozen, break the  sorbet into large pieces and place them back into the blender and mix until smooth.

Put the sorbet into a container, close tightly and store in the freezer.
